 Purebred Jersey Cows Cheese is a simple food. Except for salt, a bit of culture and enzyme, it is composed of milk. That's why the big secret to our good cheese is the health and wellbeing of our cows. They are the foundation of our farm. Jerseys produce wonderful milk for cheese, rich in proteins, solids and butterfat. Our small herd enjoys free access to the outside at all times. The young are raised with the herd and not in pens. Whenever, we can, we use herbal remedies to treat common complaints, but we rely most heavily on prevention - high quality organic feed, free choice kelp and minerals, and a lot of tender loving care. |
